Hey there! "Local-only" isn't in the official vanilla Mastodon software, but Diane's server octodon.social is running Glitch, which is an excellent unofficial fork of Mastodon.

Maria's server is just running vanilla Mastodon, so they won't have an option for local-only posts.

You can't change a post's visibility once it's been published, you would have to delete and republish it with a different visibility.
